I am constantly on the go. In fact, when I'm not it feels strange because I'm always used to running from one thing to the next. I am a sucker for quick and easy when it comes to food, but also nutritious and healthy. I have had quick grab and go's from fast food but after about a day of doing that I feel gross, run down and bloated. After a long day of working one of the last things I really want to do is cook i.e. grab something to bring home or order in.
So I have compiled a few of my favorite ten minute meals that are delicious, healthy and can even be a vegan option. Shrimp Tacos or Portobello Mushroom Tacos Ingredients: Shrimp (or Portobello mushrooms for vegan) 1/2 Onion 1/3 Tomato 1/2 Lime Cilantro 1/2 cup of black beans Directions: 1. On a skillet, cook shrimp (or mushrooms) with black pepper, garlic powder and taco seasoning (optional) and black beans 2. Dice up onion, tomato and cilantro in a bowl with lime squeezed over 3. Lay out lettuce cups or taco shells, fill up with shrimp and beans OR mushrooms and beans, layer onions, tomato and cilantro on top Enjoy!! Greek Bean Salad Ingredients: 1 can of chickpeas 1 can of black beans 1 can of kidney beans 1 jar of Kalamata olives 1 jar of green olives 1 whole cucumber 1 red onion 1/2 bag of shredded carrots 2 cups of quinoa Feta cheese (amount according to your liking) Directions: 1. Dice up cucumber and onion 2. Cook quinoa 3. Combine all ingredients in one bowl 4. Top with salt, black pepper, olive oil and lemon 5. Toss all ingredients and add in feta cheese Enjoy!

If you're like me you woke up with a stomach ache and bloating that could look more like a pregnant stomach. Regardless if your team won or lost, or if you even knew who was playing the Superbowl is a fun time to hang with friends, eat and drink.
But going back to the bloating- seriously. How can one pig out fest make me look so large and in charge? Well if your body isn't used to eating bad you'll most definitely feel worse than usual. If your body is used to healthy, wholesome foods that nourish you and then you stuff chips, heroes, fried appetizers and beer down your throat you will most definitely feel it. Okay so whatever, you allowed yourself your cheat meal- or day. But how can you bounce back quick so it doesn't effect the rest of your week? I'll tell you how. 1- Take some Tylenol if you're hungover, we are not sleeping through this one. 2- Chug some water and a lot of it. You need to hydrate hydrate hydrate. 3- Get your bum to the gym. Take a class, lift some weights, hop on the treadmill. 4- Eat a clean diet today. No more cheats your body wants that healthy food back! 5- If you're really feeling terrible get into a sauna to sweat out those toxins. 6- Cut yourself a break, you're allowed to have an off day! Get plenty of rest tonight and you'll be back to the basics tomorrow. We all want the miracle pill that still doesn't exist. We all want to lose the stubborn fat and look chiseled like the models on Instagram. But like anything in life, it takes hard work, dedication and commitment to make a change. When I had finally had enough I decided to make the serious change. With all my education and experience I knew that if I just stayed committed to myself that I could do it. So I did.
And guess what? The weight was coming off, I was feeling better about myself and my life started to change for the better. I was in a better mood. My skin was glowing. My body was beginning to change in all the right ways. Other people even caught on and began to notice. I would get what's different? What did you change? Tell me! So here's my secret. Well a couple of them. Want to know what I changed? I changed everything. 1- I changed my diet overnight. 2- I switched up my workouts. 3- I changed my thought process. 4- I made my schedule work for me. 5- I made the commitment. My diet: I completely cut out dairy, bad carbs (white bread, processed foods) sugars, and unhealthy fats. Basically if something was first living i.e. plant based foods, and animal proteins I could eat it. If it had more than 2 ingredients I wasn't putting it in my mouth. My workout: I added in cardio with my weight lifting. I used to just do weight lifting but knew that to change my body as quickly as I wanted to I would need cardio in the mix. I added 45 minutes of any type of cardio (treadmill, bike, HIIT class) to my weekly schedule 5x a week. My thought process: I stopped telling myself I wanted things that didn't fulfill me. Like the Doritos late at night or ramen because soup sounded easier to make than a real meal. I started to allow my thoughts to align with my truth and what I really wanted. My truth was in alignment with my goals. I stopped saying "I can't have that" and instead began to say "I don't want that". How you speak makes a HUGE difference. (Check out my last post on speaking to yourself) My schedule: Like most people I work full time. I have bills to pay for and a social life. It isn't always easy finding a balance. So I made a weekly schedule of work, of down time, of time to exercise and time to cook/meal prep. My commitment: I have tried to make the commitment so many times and what I realized was it was never truly for me. It was to look good at the beach, or for my boyfriend or for my business.
