Yuppppp, you heard it right. Healthy mac and cheese! I swear it is a thing. No there is not any hidden vegetables in this recipe. So maybe it isn't super healthy, but it's got some great alternatives to the classic. As you know by now, I hate cutting things completely out of my diet. I feel that depriving myself of things I want only makes me binge more. So, I look for healthier alternatives when I have cravings. Aka healthy mac and cheese.

In a world that can give us every reason to ooze negativity, what are you grateful for? Like truly, whole heartedly grateful for? I used to wake up most morning annoyed that I was waking up to go to a job I didn't like. And it would have a ripple effect on the rest of my day. It is mind blowing how negativity can so strongly effect your day. I decided I needed to make a difference in my life. I wanted to wake up with a more positive outlook. I wanted to have a reason to love my day even if I felt like I didn't love what I was doing that day.
I found a book that did just that. It was a simple notebook, that asked the question everyday. "What are you grateful for?" It challenged me on days where I felt like I wanted to write nothing, and then there were days where I felt like I could fill the entire book with gratitude. We all have our ups and downs, not every single day will be perfect, but you can find something perfect in every single day. As I have made this a crucial part of my daily regimen, I wanted to create something similar to help others. And there, birthed my idea of my gratitude journal. It is a simple journal that allows you to jot down your thoughts. I love to do this before my day starts and on tougher days, a second time before my day ends. My gratitude journal will have enough for 1 month of gratitude pages, and if you run out you can get yourself another one. New month, new reasons to be grateful!
