This is a new recipe for me! This dish was actually inspired from a orzo I had at a buffet for a baby shower. It was so delicious, light and loaded with nutrients. This is a great salad to bring to a party, a side dish for dinner, a quick lunch and even an easy meal prep for the busy days. It took me all of 20 minutes from start to finish, including cleaning up!
Ingredients: 1/2 box of orzo 1/2 container of grape tomatoes 1/2 red onion 1 whole zucchini 1/2 orange bell pepper 1/2 lemon Black pepper Garlic powder Olive oil Feta cheese Kalamata olives sliced Directions: Slice all of your vegetables and put in bowl with olive oil, lemon juice, pepper and garlic. In sauce pan, sauté zucchini. Boil water and cook orzo. When orzo and zucchini are cooled down, add all ingredients to one bowl and enjoy!

When the holidays roll around, it's like life becomes instant chaos. From the week of Thanksgiving until the first week of January we're all scrambling around. Buying gifts, Christmas parties, holiday events, cooking and hosting, we do it all in such a short period of time. With each year, I try to find what helps me keep me most grounded during the craziness. Meditation for the holidays, is the key. Mediate to center yourself, keep your mind at ease and get back into normal mode when you feel like you're losing control. It doesn't have to be long, it doesn't have to be planned, you just have to do it. And watch the stress melt away.
