This is a new recipe for me! This dish was actually inspired from a orzo I had at a buffet for a baby shower. It was so delicious, light and loaded with nutrients. This is a great salad to bring to a party, a side dish for dinner, a quick lunch and even an easy meal prep for the busy days. It took me all of 20 minutes from start to finish, including cleaning up!
1/2 box of orzo
1/2 container of grape tomatoes
1/2 red onion
1 whole zucchini
1/2 orange bell pepper
Kalamata olives sliced
Slice all of your vegetables and put in bowl with olive oil, lemon juice, pepper and garlic. In sauce pan, sauté zucchini. Boil water and cook orzo. When orzo and zucchini are cooled down, add all ingredients to one bowl and enjoy!
