Can I start by saying, tasty!!! This is the best alternative to a typical carb like rice, that still gives you great flavor. The best part of all is that you get your vegetable serving without really noticing. This is a great dish for children or anyone who doesn't love vegetables, because it's basically hidden! Ingredients: 1 head of cauliflower 2 large carrots 1/2 bag of frozen peas 1 white onion 2 eggs Pepper / Garlic powder Soy sauce 2 whole eggs Directions: First, you'll start off with your head of cauliflower which I like to cut into four smaller pieces. From there I break it down to small pieces that resemble rice like consistency. You can use a cheese grater if you have, to get the same effect. Once cauliflower is broken down to grain size, in a large pan with frozen peas, and season with pepper and garlic powder. Dice up your carrots and white onion, then adding to the cauliflower and peas. Add more seasoning to the vegetables. Once vegetables are cooked to your liking (I like to keep more al-dente) create a hole in the center and crack both eggs, then scrambling. Once scrambled, add soy sauce and allow to simmer on low. Taste to liking. I typically add 2-3 teaspoons of soy sauce. Then you are ready to enjoy!
