I loveeeeeeeee soup. Especially in the colder months. Soup makes me feel all happy and warm inside. That being said, I don't always love the calories that come along with it. One of my favorites, broccoli and cheddar soup is delicious but sure is not nutritious. I always enjoy making foods that I can also buy, because I know I can make the healthiest version of it. This recipe is my homemade chicken noodle-less soup. It's low in calories, high in protein and vegetables and tastes delicious! One of my favorite and may I say easiest homemade meals is this soup and a salad. Almost like my very own soup and salad, you pick two from Panera! This soup takes only minutes to prep, and a few hours to cook in the crockpot. Which means you can dump in your ingredients, do your thing and come back a few hours later to a yummy meal waiting for you.
I created this recipe noodle-less for my paleo friends out there. But you can really add anything else that you'd like, like rice, noodles, more vegetables, quinoa. The options are endless! Also, big disclaimer, if you are cooking with rainbow carrots, know that the color of your broth will change. I used a lot of the purple carrots, which meant my broth had a light purple tint to it. Still tasty, of course but do not fear the color! :) Ingredients: Natures promise low sodium chicken broth 3 stalks of celery 1/2 bag of organic rainbow baby carrots 1 whole rotisserie chicken (shredded) 1/2 white onion Pepper, salt, oregano, parsley to taste Directions: Chop up all of your vegetables. Put vegetables, broth and shredded chicken into your crockpot. Place on high for 4 hours. Add seasonings to taste, after 1 hour of cooking, to your liking.
